You can keep playing, in fact your save file knows you’ve beaten Ganon; there’s some symbol I believe now in the save that indicates you’ve done it.
It’s just that there are no changes to the world after you’ve beat the game.
If you want to keep getting shrines and doing other things just leave the castle.
